Potatoes and cheese with gravy.

Poutine is a dish typical of Quebec, consisting of French fries topped with fresh cheese curds, and covered with a brown BBQ gravy. This "chic" version is healthier, since the potatoes are sautéed rather then fried.

Ingredients

2 potatoes, peeled and cut into 1,5 cm pieces 400 g
2 tsp canola oil 10 mL
1 pinch salt [optional] 0.2 g
50 g Emmenthal cheese, grated 2/3 cup
1/2 cup demi-glace sauce 130 g

Method

  1. Prepare the potatoes: Peel, then dice them into 1,5 cm pieces.
  2. Heat the oil in a pan over medium heat, add the potatoes and sauté with frequent stirring, until the potatoes are a light golden colour, about 5 min.
  3. Add salt, cover and cook over low heat until the potatoes are soft, about 15 min.
  4. Preheat the broiler. Transfer the potatoes to a baking dish, add the warm demi-glace sauce and top with the grated cheese. Put the dish in the oven and broil until the cheese has just melted, about 1 min.
  5. Serve.

I couldn't find any demi-glace at the store and didn't feel like making it from scratch, so I used a can of 'Poutine Sauce' that I found at the store and it was fine. Also used mozza instead. I like this mostly because it never would have occurred to me to make poutine at home if I hadn't come across this recipe while looking to replace a different side dish.

Very tasty warm and complete the cheese and demi-glaze do it for me. MUST try with Gouda curds found at Costco. UUUUUMMMMMMM!!!!!!
